Instructions:
1 Cut strawberries lengthwise into about 5 pieces each. Sprinkle strawberries with 1/2 cup honey; do this first so strawberries have maximum time to meld with honey. Ideally let them mingle for an hour but it's not necessary.
2 Heat oven to 450°F. Grease bottom and side of round pan, 8x1 1/2 inches. Any size sheet pan will also do just fine.
3 Cut butter into flour. Personally I like to use a fork to squish the butter into the flour. Add 2 tablespoons honey, the baking powder and salt in medium bowl, using pastry blender or crisscrossing 2 knives or using a fork, until mixture looks like fine crumbs. Stir in milk just until blended. Pat dough in pan.
4 Use an upside down jar or cup to cut dough into circles. Bake 15 to 20 minutes or until golden brown.
5 While warm, top with strawberries and honey mixture. Serve warm with cream. If you're okay with a little sugar, canned whip cream is fun and adds to the presentation.
Ingredients:
1 quart strawberries, sliced
1/2 cup honey
1/3 cup butter
2 cups all-purpose flour
2 tablespoons honey
3 teaspoons baking powder
1 teaspoon salt
3/4 cup milk
Butter softened
Cream or whipped cream or 1 cup sugar-free yogurt flavored with 2 tbsp of maple syrup or honey.
